I agree that for your preferences I think the variant you linked is the best. If I was to play with a variant occupation draw that is probably the one I would use as well. It offers a nice balance between offering players options while making them have to pay a bit more if they really want a certain card--only one is free.
As for the weapons, I agree that I don't think you can let people pick. It'd be a lot harder to make fair at least. Because even things like turn order might matter--if I know the person who is going 1st next round is taking a longsword, they're probably going to lead off with pillaging, so that means I might instead want to hunt and it all sounds like more effort than its worth to me.
