Hi,When playing with more then one person, I usually use at least the tiles from some expansions:
Inns and Cathedrals - a must;
Traders & Builders - not always; the builder itself is interesting, but the trading goods are better with 1-3 persons; usually I only use four tiles without goods; the pig - only occasionally;
Abbey & Major - only new land tiles, sometimes the major; abbeys are not my favorite; the barn - don't like it; the wagon - can be irritating but still interesting;
Castles, Bridges and Bazaars - new tiles only without bridges (occasionally) and castles; I use different rules for Bazaars (you can draw one more tile but you lose some points (the amount is the same as the number of players));
King & Scout - 5 new tiles are very useful (the tile with the crossing city segments rules); The King and the Robber baron - only when having 4-6 people and together with the Traders (3 types of good plus the King plus the Robber baron = 5 opportunities to score some points);
The Siege and the Cult - I like them, but only if there are no kids;
The Phantom - only when there are many expansions added; to make things more challenging we don't allow to use it as a standard meeple;
I don't have the Minis, but the Goldmines look interesting (useful tiles)
I'm totally not into the Dragon, the Count, the Tower or the Catapult.
After putting all these expansions together there are about 130 tiles (about 150 with the Traders) - the game lasts longer with 5-6 persons and you can finish most buildings
