Sure. But that just means I don't like those games. There's a million things in the world that I find boring. That's not about them, it's about me. And having more complexity doesn't make it more likely to be boring.
I do very much care how complex a game is when (as happens four times out of my usual five) I have a new or rusty player at the table.
But that's a very particular concern. A different person might be primarily concerned with how enjoyable that game is when played the 100th time by a group of highly experienced players. Different people care about different things, so of course that means that different things are important to them.
